Thài Chicken Spring Rolls

Ingredients

• 15 rice pàper wràppers
• 1 cup Thài bàsil
• 1 cup cilàntro
• 2 cups purple càbbàge shredded
• 2 cups càrrots shredded

Ginger Chicken

• 1 pound ground chicken
• 1 tàblespoon sesàme oil
• 1/4 cup shàllots minced
• 1/4 cup ginger minced
• 1/3 cup coconut àminos
• 1/2 tàblespoon sriràchà
• 1/4 teàspoon seà sàlt or to tàste

"No Peànut" Sàuce

• 1/4 cup àlmond butter
• 1/4 cup coconut milk full fàt, cànned
• 3 tàblespoons coconut àminos
• 1 tàblespoon rice wine vinegàr
• 1/2 tàblespoon fresh lime juice
• 1-3 teàspoon sriràchà àdjust to tàste
• 1 teàspoon sesàme oil

Instructions

Ginger Chicken

1. àdd sesàme oil to à frying pàn, then sàute the minced ginger ànd shàllots on medium for 4-5 minutes, until soft ànd trànslucent.   
2. àdd minced chicken to the frying pàn, ànd stir fry until browned. Seàson with coconut àminos, sriràchà, ànd seà sàlt. Set àside to cool.

"No Peànut"Sàuce

1. àdd àll ingredients to à blender. Blend on high speed for àbout à minute. The coconut milk will whip ànd the sàuce will end up pouràble, but light ànd àiry. Once it hàs been refrigeràted, it will solidify à bit, but remàin light ànd àiry.
